asian island crunch salad with chicken...

It's the new year so we are all trying to eat better. On my recent visit to my friend Laurie's she made this salad which is a staple at their house. It is amazingly easy and really good. I actually crave this salad. Everything is in the bag-- the lettuce (which is thoroughly washed), sesame ginger dressing, sliced almonds, dried pineapple, crunchy noodles, shredded carrots, snow peas and cabbage. I also grill 2 chicken breasts on my George Forman grill and chop those up and add them. The bag is 3.5 servings but since it is salad and we are eating it as our main meal we split the bag and have a nice big salad. If I did it for company I would probably also go get a baguette.

The great thing is you can get this at the grocery store. I get it at Hy-Vee. My only comment on this salad is that the greens are romaine and iceberg lettuce and I think eating iceberg lettuce is frankly a waste of time. It is $3.99 for the bag and we get one each time we go to the store. Try it... you'll like it.
