/Caramelized Onion, Blue Cheese, Prosciutto Pizza This is our go to meal when we want something fast. If we both work together we can be eating in half an hour.
I buy pre-made pizza crusts from Fraboni's here in Madison. Fraboni's is an Italian grocery store. I know they have 2 locations for sure. This crust is in the refrigerator section packaged 3 to a pack for $3.19. I freeze them and buy 2 or 3 packages at a time. When baked this is a cracker-like Neapolitan crust.
Slice 1 large onion into rings, carmalize them. I use olive oil.
When onions are done arrange on crust. Drizzle a little more olive oil if needed.
Add crumbled blue cheese. I buy a 24 oz container of blue cheese crumbles at Sam's and keep that in the freezer.
Finally add thin slices of prosciutto. Pop it in the oven at 475 degrees for 7 minutes. With the high heat and short cooking time keep an eye on it as all ovens are different.
This is a light, thin crust pizza. If you like thick ones with lots of greasy toppings you may not like this one.
