Grilled-tomato pizzettes with fontina cheese

John did the creative part of the Fruit and Veggie Doodles font. In searching through cookbooks for pictures of things for me to draw he found some great recipes and this is one.

It was very good and easy. We make pizza dough from scratch and this is almost as good.

Slice and grill 6 plum tomatoes and 2 sliced vidalia onions.

Divide 1/2 lb of store-bought pizza dough into 4 pieces. On a lightly floured surface shape dough into 4 oval pieces. Grill until lightly charred on one side. Watch carefully.

Flip dough, layer with 1 1/4 c of shredded fontina cheese, tomatoes and onions. Grill until cheese melts and bottoms are slightly charred.

When we were in Paris we had pizzas that were this type of dough in a wood burning oven with fontina, gorgonzola and mozzerella cheeses. So you can experiment using whatever you like.
