Ham and Cheese Cornbread

3 slices thick bacon4 large eggs 1/4 c milk 1/2 c butter, melted and cooled 1-6 oz. box of cornbread mix. You can use Jiffy. I used 1/2 of a Trader Joe's mix. 6 dashes of hot pepper sauce 1 medium onion, chopped 1 1/2 c fully cooked cubed ham 2 c shredded Cheddar cheese, divided

1. Heat oven t 375 degrees. Cook bacon, crumble.

2. Beat eggs. in large bowl. Add milk, butter, cornbread mix, and hot pepper sauce. stirring until blended. Stir in onion, ham and 1 1/2 c cheese. Pour batter into oiled 10.5" cast iron frying pan. Sprinkle 1/2 c of cheese over top.

3. Bake 30 to 35 minutes or until set and golden brown. Let sit 5-10 minutes. Sprinkle with bacon.

I skipped the bacon. I didn't feel like making it and thought we could skip those calories. But it was a nice hearty meal for a snowy day.
