laurie's mashed potatoes

Mashed potatoes... the ultimate comfort food. I think this will be recipe week. I'll share some old and new favorites that made the holiday food list.

Deluxe Mashed Potatoes

8 large potatoes 1 - 8 oz. package of cream cheese 2 t. onion salt 1 c sour cream butter paprika

Peel and cook potatoes. Mash. DO NOT add milk. In mixer whip potatoes, adding cream cheese, sour cream and onion salt. Beat until fluffy. Pour into buttered dish. Sprinkle with paprika.

Bake at 350 degrees for 20 minutes or until heated through.

These potatoes can be made up to 4-5 days ahead of time.

Sadly my stepsons' mother passed away this year in mid-December. This was her mashed potato recipe. I LOVE mashed potatoes and this is the best recipe I've every had. Laurie always maintained that these were so good because there was no milk in the recipe, and that allowed you to make them a head of time and still have creamy potatoes.

I think this will become a family recipe so we can always remember her at the holidays.
